Vegan Sloppy Joes

Saucy, sweet and savory, these sloppy joes make an easy, hearty weeknight dinner that's packed with protein and fiber. It also makes a fantastic meal prep dish; simply scale the recipe and cook it in a Dutch oven or slow-cooker.

I like using beef-style crumbles (such as the ones by Trader Joe's or Beyond Meat) in this recipe, but feel free to se your favorite vegan protein source. I've also made these with lentils, crumbled tempeh, and rehydrated TVP. If you make this substitution, I recommend boiling your lentils or tempeh in a beef-flavored broth such as Not Beef Cubes or No Beef Better than Bouillon to add extra depth of flavor.

Easy Vegan Sloppy Joes

ingredients:

  • 1 (12 oz) package vegan beef-style crumbles**
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 1 green pepper, diced
  • 1 (15 oz) can tomato sauce
  • 1 tablespoon vegan Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons maple syrup or brown sugar
  • 1 teaspoon garlic powder
  • salt and pepper, to taste

instructions:

  1. Sauté onions, celery and peppers over medium heat until onions are translucent, about 3-5 minutes.
  2. Add in remaining ingredients and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
  3. Uncover and simmer for an additional 3-5 minutes if needed to cook off any excess liquid before serving.

**You can also make this recipe with crumbled extra-firm tofu, crumbled tempeh, cooked green lentils, or TVP rehydrated with vegetable broth.
